Simple and Authentic Fresh Greek Salad

During the summer I simply lose all motivation to cook. It’s hot, the kids have me running around with activities, and the thought of just running the oven has me melting. Luckily God is good and has wonderful veggies and fruits available for us to utilize during those hot summer days.

Over the past few years I’ve developed the love of gardening. We’ve found that we excel in lettuce growing, so what better way to enjoy our crop with a fresh summer salad?!

This Greek salad is something that my family enjoys anytime of year. The fact that it’s super simple to make and so refreshing makes it a summer staple in our home.

Authentic Greek Salad

  • 1 head Romaine Lettuce
  • 1/2 Red Onion
  • 2-3 Tomatoes
  • 1-2 Cucumbers
  • 1/3 cup Feta Cheese
  • 1/4 cup Kalamatta Olives
  • Dressing

  • 2 Tbs Olive Oil
  • Juice of 1 lemon
  • 1 Tbs Dill
  • Salt to taste


  1. Chop all ingredients and place in large bowl 2. Mix up dressing 3. Add dressing to salad, toss and serve

Remember that you can change and add to your liking. Adding grilled chicken takes this from a simple salad to a full on meal! Hope you enjoy it as much as my family does.
