Thanksgiving Side Dish – Cheesy Scalloped Potatoes

It is one of my favorite times of the year. The holidays are rolling in and I am excited for all of the festivities. Thanksgiving is around the corner and it will be here before we know it. I can not wait for all of the delicious food and blessed time we get to spend with our loved ones.

My husband and I have always split Thanksgiving between our families. Yes, for 13 years we have done 2 thanksgivings in one day. Thankfully, our families are not too far from each other.

My husband’s family celebrates with mainly the immediate members. That may sound small but my husband comes from a big Greek family. He has 3 brothers and a sister, and maybe 13 years ago it wasn’t as many people. Nowadays, we are practically all married with children and the Politis have really blossomed into a large group.

My family is a combination of my grandmother, all her children, their spouses, as well as their children, and now those children have children. We are 4 generations in. Since there are so many of us, we all contribute with a dish or two. My grandmother always makes the main event, the turkey. One aunt will make the ham, another aunt is another main dish, my mother usually does the stuffing and cheesecakes. As for all the children, we bring the side dishes.

This year, my husband and I have been trying to come up with ideas for a good side dish. Particularly, one that our kids will also enjoy. We made a 5 cheese gourmet mac and cheese and my son greatly approved. Our other option was a cheesy scalloped potatoes recipe my husband came up with, he is our own little personal chef . Cheesy Scalloped Potatoes

A delicious cheesy scalloped potato, perfect thanksgiving side dish addition.

Ingredients

2-3lbs of Potatoes

Milk

Butter

Shredded mozzarella parmesan cheese

16 0z of Cream cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Slice about 2-3 lbs of potates and rinse the potatoes (get rid of excess starch).
  3. Line baking pan with butter and enter in a layer of potatoes
  4. Making the sauce: Warm up 2 cups of milk in a pot
  5. Stir in half a cup of mozzarella parmesan cheese
  6. Stir in 16 oz of cream cheese until it thickens
  7. Salt and pepper to taste, maybe even some garlic.
  8. Pour sauce over layer of potatoes in baking pan.
  9. Then add new layer and repeat until pan is full.
  10. Sprinkle the last layer with some of mozzarella parmesan shredded cheese leftover
  11. Enter pan into 350deg oven and let cook for one hour.
  12. After, cook the pan for another 15mins on broil or until you have some brown on the top.
